Snack: Chips and Queso Blanco
Let’s monorail over to Epcot for our next Disney movie and snack. This park is definitely the hardest for me to choose a snack from because Epcot has so many delicious options. However, when it came to choosing a movie that reminds me of Epcot, I immediately thought of Coco. Mexico is my favorite country in Epcot’s World Showcase for many reasons. As you enter the Mexican pyramid, you are greeted by Miguel, Dante, and an exhibit all about Mexico’s Day of the Dead. As you enter the Plaza de Los Amigos, you will see lights strung up under a twinkling evening sky and several vendors selling authentic Mexican souvenirs. You are also met with the delicious smell of Mexican cuisine coming from a restaurant overlooking the Gran Fiesta Tour Starring The Three Caballeros attraction. In order to satisfy my craving for some authentic Mexican food and to cure my Disney blues, I decided to make my own homemade queso and watch my favorite Disney Pixar movie, Coco.
Chips and Queso Blanco Recipe
- Tortilla Chips
- 1/2 lb White American Cheese
- 1/4 cup Whole Milk
- 1 tbsp Butter
- (1) 4 oz can Diced Green Chiles (not strained)
- 1/4 tsp Cumin
- 1/4 tsp Garlic Powder
- Pinch of Cayenne Pepper
- Place cheese, milk, and butter in a saucepan over low heat.
- Heat until melted, stirring frequently.
- Stir in green chiles.
- Mix in cumin, garlic powder, and cayenne pepper.
- Serve immediately with tortilla chips, and enjoy!
